This is my new favorite shrimp recipe.  The herbs give it a richness.  The peppers give it some heat.  Allowing the oil to infuse with the flavors prior to cooking the shrimp allows those flavors to embed themselves in the cooking process.

Seared Tuna with Wasabi Aioli

Tonight’s creation was seared sesame tuna on a bed of baby lettuce with a garlic/ginger rice wine vinaigrette topped with a wasabi aioli augmented by red mini bell pepper slices, raspberries and fresh cilantro (from our ‘garden’).

The healthy fat was supposed come from avocado slices, but I was too tired and forgot them 🙁 Ah well, there was oil in the dressing and aioli.

Shrimp with Basil Pesto Spaghetti Squash

Last night I was so bummed about dinner. I had intended to make chicken with pesto spaghetti squash. During the final assembly I realized the store-bought pesto had gone bad. frown emoticon So, it was a scramble to figure out how to finish the chicken and squash. It turned out great after all – just not pesto.

Since the yearning was still there and I had never made pesto before, tonight’s dinner was homemade pesto with shrimp. Maybe that was better anyway.

Turkey Italian Meatballs

Since my wife is not eating red meat at the moment.  Therefore, I am learning to cook more with turkey.  And, instead of buying turkey Italian sausage, I made my own spice and herb mixture.

Also, sometimes turkey is hard to brown.  Frying the meatballs in a fat that will sustain a high heat helps put a crust on the outside.
