Shrimp with Basil-Garlic Butter
  1. Preheat oven to 350°F.
  1. Season shrimp with salt and pepper.
  2. Heat oil in a skillet until oil is quite hot but not smoking.
  3. Brown shrimp for about 1 minute on each side.
  4. Place the shrimp in an oven safe dish and bake until finished cooking, 5-7 minutes.
  1. Add garlic to the the skillet and saute just until it is fragrant, making sure to not brown it (15-30 seconds).
  2. As soon as the garlic is fragrant, immediately deglaze with wine to stop the cooking.
  3. Add lemon juice and sun-dried tomatoes.
  4. Simmer until the sauce is reduced to 1/3 of its original quantity.
  5. Add butter and basil. Stir until butter is melted and blended.
  6. Plate the shrimp, drizzling or pouring the sauce over the shrimp.
