I am not experienced at roasting meat. My wife asked for a pork roast so I had to learn in a hurry. This rub gives the roast a lot of flavor. You might adjust the amount of cayenne to your taste. It was very much to our liking, but many of our Minnesota friends might cut the amount in half.
Ingredients
- 2-3 lb pork sirloin tip roast
Rub
- 1-1/4 tbsp paprika
- 1 tbsp kosher salt
- 1 tsp Garlic powder
- 1/2 tsp ground black pepper
- 1/2 tsp Onion powder
- 1/2 tsp ground cayenne pepper Adjust to your liking
- 1/2 tsp Dried oregano
- 1/2 tsp dried thyme
- 2 tbsp olive oil

Instructions
- Mix the rub ingredients together in a small bowl. Let them sit for about 15-20 minutes to meld the flavors and form a paste
- Preheat oven to 350 degrees (F)
- Rub the entire roast with the seasoning paste and place on a baking sheet
- Place in the oven until the internal temperature reaches 145 degrees (F). This will probably take about an hour.
- Remove from the oven and let the roast rest for 10-15 minutes.
- Slice the roast into 1/8 - 3/16 inch slides across the grain.

Just made this last night. It was my first time cooking any kind of roast, but it came out perfectly! My husband, the meat expert in our family, was singing its praises!

I am so glad you enjoyed it.

do we cover the roast up or no?
i’m making it today
LeRoy
I wouldn’t cover it. It will get crispier if left open.
Sorry for the late reply. How did it turn out?
