Ingredients
- 1/4 cup pine nuts
- 2 tbsp garlic
- 1-2 cups fresh basil
- 1/4 cup fresh mint
- 1/4 cup olive oil
- 1/2 cup grated parmesan

Instructions
- Toast the pine nuts briefly in a hot pan
- Put the garlic, basil and mint in a food process and puree
- Add the Parmesan to the food processor and pulse to combine
- With the food processor running, drizzle the olive oil into the processor until the pesto is the desired consistency
