Go-To Breakfast Scramble

This is my go-to breakfast scramble that I make most days of the week. It gives me the energy to get my day started.

I get pork sausage from our local coop. They grind it fresh and season it with sage, savory and cayenne. Much better than the stuff in the plastic bullet.

If you cannot find something similar, just buy good ground pork and mix in the seasonings.

Ingredients
  • 1-2 tbsp ghee
  • 2 mini bell peppers sliced thinly
  • 2 slices shallots
  • 2 eggs scrambled
  • 3 cups baby spinach
  • 2 oz pork sausage pre-cooked

Instructions
  1. Melt the ghee in a non-stick fry pan over medium heat.
  2. Add the pepper slices and shallots.
  3. Saute until lightly carmalized.
  4. Add the spinach and cook until it is wilted, stirring to combine.
  5. Add the sausage and cook until heated.
  6. Pour in the scrambled eggs and add fresh ground pepper.
  7. Keep folding the eggs until not quite set. The whites should be completely set but the yokes should still be moist.
  8. Remove from the heat and plate immediately.
  9. Grind a very light dusting of sea salt over the eggs to bring out the flavor.
  10. Consume immediately.
Recipe Notes

This will work fine with a ground turkey.

Remember, according to Julia Childs, you must beat the eggs with 80 strokes. No less. No more. 🙂

Sometimes I throw in some dried thyme while cooking the peppers.
