A few years ago I wasn’t fond of salmon at all. However, after learning how to cook it salmon has become a weekly meal. This is one of our favorites. A bit of spice from the chili. A bit of sweet from the maple syrup.
Ingredients
- 1/2 tsp paprika
- 1/2 tsp ground ancho chile powder could substitute regular chile powder
- 1/8 tsp ground cumin
- 1/8 tsp brown sugar
- 1/4 tsp kosher or sea salt
- 10-12 oz sockeye salmon
- 1 tbsp maple syrup

Instructions
- Preheat broiler.
- Combine paprika, ancho chili powder, cumin, brown sugar, and salt.
- Rub the spices onto the salmon.
- Cut the salmon into pieces 2-3 inches wide.
- Put a little bit of olive oil on a baking sheet. This will help keep the salmon from sticking.
- Put the salmon on the baking sheet and broil for 6 minutes or until not quite cooked through.
- Remove from the oven, baste with the maple syrup, and broil for 1 minute or until nicely glazed and barely cooked through.
