Chili-Maple Glazed Salmon

A few years ago I wasn’t fond of salmon at all.  However, after learning how to cook it salmon has become a weekly meal.  This is one of our favorites.  A bit of spice from the chili.  A bit of sweet from the maple syrup.

Ingredients
  • 1/2 tsp paprika
  • 1/2 tsp ground ancho chile powder could substitute regular chile powder
  • 1/8 tsp ground cumin
  • 1/8 tsp brown sugar
  • 1/4 tsp kosher or sea salt
  • 10-12 oz sockeye salmon
  • 1 tbsp maple syrup

Instructions
  1. Preheat broiler.
  2. Combine paprika, ancho chili powder, cumin, brown sugar, and salt.
  3. Rub the spices onto the salmon.
  4. Cut the salmon into pieces 2-3 inches wide.
  5. Put a little bit of olive oil on a baking sheet. This will help keep the salmon from sticking.
  6. Put the salmon on the baking sheet and broil for 6 minutes or until not quite cooked through.
  7. Remove from the oven, baste with the maple syrup, and broil for 1 minute or until nicely glazed and barely cooked through.
