I love pizza!!! That has been one of the hard things about going grain free. Pizza. I could eat it once or twice a day.

Sometimes you just get a need for pizza.

Imagine if a loaded deep-dish pizza had a three-some with baked ziti and a head of cauliflower. Their baby would look something like this. Cauliflower, homemade Italian sausage, pepperoni, veges, three kinds of olives, two kinds of cheese and more.

This is my new favorite shrimp recipe.  The herbs give it a richness.  The peppers give it some heat.  Allowing the oil to infuse with the flavors prior to cooking the shrimp allows those flavors to embed themselves in the cooking process.

Shrimp with Basil Pesto Spaghetti Squash

Last night I was so bummed about dinner. I had intended to make chicken with pesto spaghetti squash. During the final assembly I realized the store-bought pesto had gone bad. frown emoticon So, it was a scramble to figure out how to finish the chicken and squash. It turned out great after all – just not pesto.

Since the yearning was still there and I had never made pesto before, tonight’s dinner was homemade pesto with shrimp. Maybe that was better anyway.

Pork Sirloin Tip Roast

I am not experienced at roasting meat.  My wife asked for a pork roast so I had to learn in a hurry.  This rub gives the roast a lot of flavor.  You might adjust the amount of cayenne to your taste.  It was very much to our liking, but many of our Minnesota friends might cut the amount in half.
