I made dinner tonight using other people’s ideas. The Pistachio-Crusted Salmon was from Michelle’s recipe. The Roasted Brussels Sprouts and Squash with Dried Cranberries and Dion Vinaigrette are courtesy of Laura. The pairing sounded good because they both had a touch of Dijon mustard.
When I stopped at the market, I was so tired that I bought a sweet potato instead of a squash. Then when the cooking part came around, I completely forgot the dressing on the vegetables. It still tasted great and can’t wait to make it again, this time following directions.
